Bara-Cara is made by Melly Barajas Cárdenas at her distillery in Valle de Guadalupe, Mexico. It is the truest expression of her time-honed Tequila-making techniques - slowly fermented, free from additives, and proofed for pleasure at 42% ABV.

Bara-Cara is made much the same way as Tequila was produced 50 or 60 years ago. It starts with 8-10 year-old mature agave from the Highlands of Jalisco. These plants are hand-harvested and cut uniformly for even roasting at low temperatures in traditional ovens.
After the hearts of the agave are roasted, they are milled and the resultant liquid is slowly fermented over ten to twelve days at ambient temperatures. It's this long fermentation that yields many of the distinct flavors and aromas of Bara-Cara. Fermentation is followed by double distillation in stainless steel pot stills before the spirit is rested, proofed and bottled at 42% alcohol by volume.
Melly abstains from modern production techniques like using a diffuser for extraction or adding yeast nutrients during fermentation.
